But even so, you reluctantly force down forkfuls of salad, knowing the benefits of filling your body with more greens. (All the while eyeing up your co-workers lunch, with each grainy leafy green bite…) Am I right?

Well, let’s put a stop to this yucky salad cycle, yes?

Keep your new salad experience simple.

I’ve listed three of my top satisfying salads that can be batch cooked once, in under an hour, and will carry you through the work week.

Start by scanning the recipes to see which one contains ingredients you might already have, or choose the one that looks most appealing to you.

Pick just one new recipe and see how it feels in your body and how it works for your schedule. You’ll be looking forward to (and showing off) your lunch in no time.

Some helpful hints!

After you’ve made the salad, divide and store in individual containers for a grab n’ go lunch in the a.m.

Make your lunches ahead of time to ensure healthy options are always available. In doing so you’ll save dollars, and avoid any afternoon bloating that can come from convenience foods.

Make bulking up your salads easy by:

  • Batch cooking grains – try quinoa & rice.
  • Hard-boiling eggs – will last in the fridge up to five days.
  • Grate veggies – carrots and beets work well (and are so pretty!)
  • Creating a seed topping – sesame, sunflower, ground flax, hemp hearts – use your fav’s.
  • Not forgetting healthy fats – olives, oil (olive, avocado, coconut), avocado, walnuts, Brazil nuts and tahini will help you feel fuller for longer.
